Crock Pot Chicken Piccata

Friends, I’m on a new recipe kick. I’m not sure how much my family is enjoying these dinnertime surprises, but I have to believe that if I’m bored cooking certain things–they have to be bored eating them! I’m so excited that my daughter Grace will be home soon for the summer because she is great at feeding me new things to try. But until then, my crew is at the mercy of things that look interesting to me. Here’s what I’ll be cooking up this week.

Monday: Crock Pot Chicken Piccata with Onion Rice and Green Beans

Tuesday: Spring Carbonara

Wednesday: Annie’s Famous Ground Beef Tacos (aka, Trader Joe’s Taco Seasoning with lean ground beef and all of the taco fixings. Her secret favorite topping is shredded iceberg lettuce.) She’ll serve with a side of broccoli and Rice A Roni’s Cilantro Lime Rice.

Thursday: Sheet-Pan Spring Chicken with Artichokes and Asparagus

Friday: Eddie’s choice. (Our sweet boy Eddie is having his ACL/MCL/Meniscus repaired on Thursday, so whatever we can do to make him feel better–that’s our plan! Eddie’s choice for Friday night it is!)

    Crock-Pot Chicken Piccata was a HUGE hit in my household! Honestly, I was a little bummed to see the prep work before going in the crock pot, but it was well worth it. Don’t skip the step of browning the chicken breasts. Also, I cooked them on Low for 4 hours which left them still in-tack when I took them out. The sauce was also spot-on. Delicious!
