TikTok’s Baked Feta & Cherry Tomato Pasta

When my kids heard that I was making the baked feta and cherry tomato pasta that has gone viral on TikTok, they were shocked. They couldn’t figure out how on earth I had heard about it, much less seen, because I’m clearly not cool enough to even have Tiktok on my phone. But little did they know, I follow a number of very cool bloggers on Instagram–who are also on TikTok–and the recipe made its way to me! Ha! (So the kids were kind of right, I’m not cool enough for TikTok.)

Friends, this recipe lives up to its hype! It easily serves 4-6 as is. I made a few little changes to the original recipe posted below that I’ll tell you about upfront:

  • I didn’t mix the pasta into the feta and tomato sauce. Instead, I kept it as a separate sauce.
  • I added a few stalks of asparagus to the cheese and tomatoes to add some greens.
  • Since I’m watching my carbs, I made some zucchini spirals for me. They were delish with the sauce!
  • To add some protein, I marinated some chicken in Garlic Expressions dressing and baked it in the same oven with the cheese, tomatoes, and asparagus. (I can find this dressing everywhere: Jewel, Sunset, and Heinen’s.)

What You Need

  • 1 box of your favorite pasta
  • 8-ounce block of feta cheese
  • 2 cups cherry tomatoes
  • 1 garlic clove, chopped
  • 1/4 cup plus 1 tablespoon olive oil
  • 3-4 basil leaves, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • lemon zest

What You Do

  1. Preheat oven to 400. Add cherry tomatoes to a baking dish and add 1/4 cup olive oil, chopped garlic, salt, and pepper. Mix together. Add the block of feta cheese to the center of the baking dish. Top with 1 tablespoon olive oil and oregano. Add lemon zest. Bake for 25-30 minutes until tomatoes are roasted and feta is soft-melted.
  2. Bring a large pot of salted water to boil and cook pasta according to boxed instructions. Strain pasta and set aside.
  3. Remove tomatoes and feta from oven and using a spoon, add fresh basil. Mix together the tomatoes and cheese to create a sauce (you’ll need to smoosh the tomatoes). Add in your cooked pasta and mix together until all noodles are evenly coated. Serve and enjoy!

    It is delicious. We made it with spaghetti squash instead of pasta and my husband absolutely loved it. My daughter gave us the heads up on this one! Thanks for sharing!

    If you cook with the chicken how long is the bake time ?

      Hi there! I cooked the chicken separately from the tomato and cheese mixture and my recipe usually calls for about 30-35 minutes at 350. I just did a little marinade using Garlic Expressions dressing. I hope this helps!

Happy Wednesday! With the weather being so sunny t Happy Wednesday! With the weather being so sunny this week, I really believe that summer is in sight (thank goodness!). So later today, I will be sharing my warm weather skincare routine on the blog, very similar to my winter one with a few little tweaks. But the one thing that I think has been the biggest game changer has been getting more sleep! 😴 This old lady now heads to bed about 9:30 p.m., with lights out not long after 10 p.m. These days, I'm getting about 8 hours of sleep and it's crazy how much better I feel, how much brighter my skin is, and how much clearer I can think. 💤

It’s hard to believe that we’re more than a ye It’s hard to believe that we’re more than a year into the pandemic. Yet even with all of these months behind us, each new development in dealing with it–from Covid tests to getting the vaccine–takes a lot of learning. That’s why we’re so lucky to have people like Lake Forest’s Nicole Phelan in our community who just jump right in and figure things out. Today on the blog, I share the work she's been doing with some faithful volunteers to get our local seniors their vaccine appointments.⁣

I'm so excited to share this story because Nicole is one of those amazing women who sees anything being possible. She had a vision over the holidays to light her entire Meadowood neighborhood with luminaries and she did it! Nicole truly does the most selfless things with such kindness, and this got me thinking....⁣

The local school board race has been really heated, especially going into this final stretch to election day on Tuesday. At the end of the day, regardless of who you are supporting, these individuals are VOLUNTEERING to serve our community. I think it would help everyone if we assumed from the jump that we are all coming from a good place and doing the best we can--even if we don't agree. ⁣
