This is the week we take two of my kiddos off to college. I can’t even believe this is possible, but it is!
To mark this milestone, my two oldest have requested “my greatest hits” for dinner, things they supposedly won’t be able to get in the Notre Dame dining hall. I’m so happy to do this for them and I’m secretly hoping this will make them excited to come home for fall break.
Here’s what’s for dinner this week:
Monday: Pork tenderloin, vermicelli noodles sauteed in olive oil with parmesan cheese, broccoli florets, mixed greens salad and blueberry peach cobbler for dessert (we’ll eat this all week!)
Tuesday: Old fashioned ground beef tacos with hard shell, Spanish rice, green beans, cubed watermelon
Wednesday: Pesto salmon filets (Costco sells these already made if you need a timesaver), crispy red potatoes, roasted brussel sprouts, mixed greens salad.
Thursday: Red sauce with Italian sausage over spaghetti squash, sauteed zucchini, garlic bread, mixed greens salad and Grandma’s homemade chocolate chip cookies (let me know if you’d like me to share this recipe)
Friday: We leave first-thing Friday morning and will be at the mercy of Notre Dame’s dining hall (sigh!)
Next week I’m guessing there will be even more comfort food items on the weekly menu as I’m getting used to my quieter house.

Vanessa, I’m such an unfancy cooker. (Ugh.) But, this recipe is super easy. I buy the pre-seasoned pork tenderloin from Costco. I brown some chopped onions in olive oil and then place the tenderloin in the pan with them and brown them until they are cooked through, usually about 15 minutes. I hope this helps!xo
