4th of July Recipes

The 4th of July is one of my favorite holidays of the year. We have tons of family and friends in town this weekend and it has my kitchen hopping! Since I’m cooking up a storm, I thought it might be helpful to share some of the things I’m making in case you need a last-minute side or dessert. So let’s get to this.

Cowboy Caviar

This was so fresh-tasting and easy to make. I couldn’t find black-eyed peas so I substituted edamame and it worked great. My kids loved dipping these lime-flavored tortilla chips into it or you can serve this as a side to your main dish.

Watermelon Arugula & Feta Salad

Peach and Blueberry Cobbler (minus the blueberries)

I went to make this blueberry peach cobbler only to find that someone had eaten all of my blueberries. But I have to tell you, this recipe with only peaches was still just as good. Serve it warm with vanilla ice cream and you have a hit.
