Stuffed Peppers

Hello friends. It feels like back to school is officially underway. Tennis tryouts, football season, doctor appointments, school supply shopping…it’s all happening this week! For this reason, I’m leaning back into Sunday meal planning and grocery shopping. My days go so much better when this part is all figured out before the week even starts. You’ll also notice a healthier slant to this lineup. I personally need to clean up my eating and these recipes will help me do that without having to fix one dinner for my family and something else for me. I’m hoping this will work!

Here’s what I’ll be cooking up this week:

Monday: Mediterranean Stuffed Peppers

Tuesday: Asian Chicken Yum-Yum Bowls

Wednesday: Chicken Sausage Meatballs with Orzo

Thursday: One-Tray Roasted Crispy Potatoes and Chicken Sausage

Friday: Pizza day (this always is such a relief after a week in the kitchen!)

Before I let you go, just wanted to share the before and after of our little kitchen valence project. My sweet friend Kristi Nevin, who has helped me with a number of projects around our house, found this beautiful fabric at Calico Corners practically the day it arrived at the store. We then had this simple window treatment made and it absolutely finishes off our kitchen. I felt like we needed something to warm up this space a bit and I think this valence does this trick.
