There once was a time when I could eat a muffin for breakfast (or what some might call a smallish cake) with no guilt. Not an ounce. There were even moments I could justify those muffins as a healthy choice–those fruit-filled, oatmeal-covered bites from heaven. But no more.
Until…my daughter Grace, the most disciplined and health-conscious teen I have ever met, told me that she makes a regular habit of grabbing a muffin from the Lake Forest High School coffee shop if she’s looking for a quick breakfast or lunch. Grace isn’t easily won over, but she couldn’t say enough about how good they were. The icing on the cake was that they were made by Holcomb Hollow, the premier bakery in Lake County for gluten-free, dairy-free, and vegan products.
The muffins lived up to the hype, as I bought three from the Hansa Coffee in Lake Bluff only to have them disappear within minutes from their paper bag. They come in tons of flavors–zucchini chocolate chip, double chocolate chip, banana cinnamon swirl, lemon blueberry, triple berry cobbler, pumpkin chocolate chip, expresso, and pumpkin crunch to name a few.
Holcomb Hollow also has oatmeal bowls that my daughter and her friends swear by that are often sold where their baked goods are offered.
As luck would have it, Holcomb Hollow is hosting an open house today and tomorrow in their new bakery space. Today, you can visit them at 1059 E. High Street in Mundelein from 7 a.m. to Noon and tomorrow, Saturday, from 9 a.m. to Noon.
